Some Types of Honey
Sourwood
Classic, much sought after, Appalachian specialty honey! Sourwood honey can be a thin, complex honey with a dark amber to straw color. Mingled with fragrant, highly floral tones, it has a taste almost like clover honey initially with a rich, buttery maple butterscotch flavonoid finish. It is delicately balanced with a wispy bouquet of mysterious spices with undertones similar to anise, clove, herbals, and woody. A definite sweet and sour quality that pairs well with Asian foods. Sourwood honey does not crystallize easily.
Sumac
(Smooth sumac is not poisonous.) *Winner of local, state and national awards.
Smooth sumac (Rhus glabra) is the only tree/shrub which can be found in all of the 48 contiguous states. The minerals in this dark, rich, late June-July nectar give it the dark color. It has a thick rich consistency, sweet flavor. When the honey is fresh there is a slight bitter note at the finish. However, the bitterness disappears a short time after bottling.
Tulip Poplar

Tulip Poplar honey is dark red amber in color and has the most robust flavor of any varietal. It has a medium, robust flavor which retains a certain crispness despite its uniquely rich flavor profile. This honey is dark because of its high mineral content, which health food experts consider desirable. Tulip Poplar is also particularly high in antioxidants. Use Tulip Poplar honey anywhere you want an intense honey flavor - such as in tea, or with a strong cheese. It has a rich taste that is similar to a fig jam.
Wildflower
Wildflower Honey is medium-amber in color and medium-strong in taste. This depends on the floral source which the honeybees collect the nectar from. It can vary widely from year to year in the same location based on what is blooming and percentage mix with other blooms. As a result, the flavor and color can be very diverse depending on area. This honey is the best choice for those people that want honey to help with allergies.
Blackberry
This robust mild honey has a soothing taste that lingers with a crisp, mild and distinctive flavor. It can be Reddish-brown or near-white in color and is a bit more flavorful than clover honey.
This honey is crisp and sweet, with a slight berry tang. It has a delicate flowery aroma to complement its normally-mild taste. This honey has a relatively-high fructose content, meaning it is slower to crystallize than many other varieties of raw honey.
Creamed Honey
Creamed honey is one of the finest, least-known honey products available. Unlike liquid honey, it is spreadable like butter at room temperature and doesn't drip. The process of creating creamed honey involves precisely controlling the natural tendency of honey to crystallize.
